Enterprising workers used Rosendale’s now-defunct gristmills to grind the first cement for commercial distribution (used in the foundation of the Brooklyn Bridge and Statue of Liberty) and, earlier, to supply flour for General Washington’s Continental Army troops at Valley Forge. Today, the Cement Factory is a lively bistro café with an outdoor patio . . . ah, how times change.
